Asparagus Rice

INGREDIENTS

  • 1 lb

    Asparagus, boiled

  • 2 cup

    Water

  • 1/2 stick

    Butter

  • 2 tbls

    Olive Oil

  • 1 med

    Onions

  • 2 cup

    White rice, long-grain

  • 2 cup

    Canned Chicken Broth

  • 1 tbls

    Parmesan Cheese

DIRECTIONS

1. Carefully remove the tender tips from asparagus and reserve.

2. In a blender, puree the rest of the stems with some of the water and strain. Add enough of the water to make 2 cups of liquid. Set aside.

3. Melt butter in oil and saute the onion.

4. Add the rice, and gradually add the asparagus broth until all is absorbed.

5. Add the chicken broth and cook until rice is done.

6. Stir often to avoid sticking. When done, gently mix in grated cheese and asparagus tips. Serve hot.
